Episode 13 Lentil Soup & Creamy Chickpea Salad
Ingredients

  • subheading: Lentil Soup:
  • 2 yellow onion
  • 6 ribs celery
  • 5 carrots
  • 1 to 2 T minced garlic
  • No-Salt Seasoning (not critically important, could also use an Italian seasoning)
  • 2.5 cups dry green lentils, rinsed
  • 2 14.5 oz cans diced tomatoes
  • 8 to 12 cups of water or veggie stock (depending on how viscous you prefer it)
  • 2 bunches of kale
  • balsamic vinegar, just a dash in your bowl when you serve it. I forgot to do this during the show, but it is super delicious
  • subheading: Creamy Chickpea Salad:
  • 6 ribs of celery
  • 1 medium red onion
  • 2 pints of cherry tomatoes
  • 4 15.5 oz cans of garbanzo beans chickpeas
  • 2 diced avocado (optional)
  • A big handful of chopped arugula (optional, could also use spinach, romaine, etc)
  • 1 T kelp flakes or use ground dried seaweed like I did
  • black pepper to serve
  • subheading: The Dressing:
  • 1 cup of cashews or white beans
  • 1 cup water
  • ⅓ cup lemon juice
  • ¼ cup mustard
  • 4 t apple cider vinegar
  • 2 to 3 t or more of minced garlic
  • 2 t curry powder
