  • 3 cups thinly sliced cabbage, preferably napa (5 or 6 medium leaves)
  • 1 medium carrot, peeled and thinly sliced into matchsticks
  • 1 medium red bell pepper, thinly sliced into matchsticks
  • 2 medium scallions, sliced into 1-inch pieces
