Midsummer Berry Tart
Ingredients

  • 1 cup sugar
  • 2 to 3 teaspoons lemon zest, finely grated (from 1 lemon)
  • 1 tablespoon orange zest, finely grated (from 1 orange)
  • 5 cups King Arthur Unbleached Pastry Flour or Pastry Flour Blend, or 4 ¾ cups King Arthur Unbleached all-Purpose Flour
  • 1 teaspoon salt
  • 1 ½ cups (24 tablespoons) unsalted butter, slightly softened
  • 1 large egg
  • 2 large egg yolks
  • 1 to 2 tablespoons water
  • subheading: CREAM FILLING AND STRAWBERRY TOPPING:
  • 1 ½ cups cream cheese or Neufchâtel cheese, softened
  • ¼ cup sugar
  • 2 tablespoons freshly squeezed orange juice
  • 1 tablespoon orange zest (the zest from 1 orange)
  • ¾ cup heavy cream
  • 2 tablespoons vanilla sugar or 1 teaspoon vanilla extract
  • ¼ cup firmly packed brown sugar
  • 4 cups (1 quart) fresh strawberries, or the berries of your choice
  • ½ cup apricot jam, optional
