Chicken smothered with Sauteed Mushrooms and Spinach

Ingredients
- 4 boneless, skinless chicken thigh
- Salt
- Pepper
- 4 tablespoons butter
- 1 tablespoon minced garlic
- 16 ounces sliced mushroom
- 1 tablespoon olive oil
- 4 ounces (13 grams) minced yellow onion
- 10 ounces frozen spinach (1 box), thawed and drained
- 4 ounces cream cheese
- 4 ounces heavy whipping cream
Steps
- Spray a glass pan with Pam Olive Oil
- Dice chicken into bite sized pieces and spice with salt and pepper
- Evenly space seasoned chicken in pan
- Bake at 425 degrees for 20 minutes or until fully cooked
- While chicken is cooking, melt butter in sauce pan over low heat
- Add minced garlic and saute until lightly browned
- Add mushrooms and put lid onto pan and cook over low to medium heat, stirring occasionally
- When mushrooms are mostly cooked, removed lid to evaporate liquid
- Stir until mushrooms are lightly browned
- In a second sauce pan, heat olive oil on low heat
- Add minced onions and cook until translucent
- Add spinach and heat
- Add cream cheese and stir until melted
- Add heavy whipping cream and stir until thickened
- Plate cooked chicken, topped with creamed spinach and sauteed mushrooms.
