Keto Chicken - Mushroom Spinach Smothered Chicken
Chicken smothered with Sauteed Mushrooms and Spinach

Ingredients
  • 4 boneless, skinless chicken thigh
  • Salt
  • Pepper
  • 4 tablespoons butter
  • 1 tablespoon minced garlic
  • 16 ounces sliced mushroom
  • 1 tablespoon olive oil
  • 4 ounces (13 grams) minced yellow onion
  • 10 ounces frozen spinach (1 box), thawed and drained
  • 4 ounces cream cheese
  • 4 ounces heavy whipping cream
Steps
  1. Spray a glass pan with Pam Olive Oil
  2. Dice chicken into bite sized pieces and spice with salt and pepper
  3. Evenly space seasoned chicken in pan
  4. Bake at 425 degrees for 20 minutes or until fully cooked
  5. While chicken is cooking, melt butter in sauce pan over low heat
  6. Add minced garlic and saute until lightly browned
  7. Add mushrooms and put lid onto pan and cook over low to medium heat, stirring occasionally
  8. When mushrooms are mostly cooked, removed lid to evaporate liquid
  9. Stir until mushrooms are lightly browned
  10. In a second sauce pan, heat olive oil on low heat
  11. Add minced onions and cook until translucent
  12. Add spinach and heat
  13. Add cream cheese and stir until melted
  14. Add heavy whipping cream and stir until thickened
  15. Plate cooked chicken, topped with creamed spinach and sauteed mushrooms.
