Meat Internal Temp Temperature Guide
Seared pork shoulder steaks (about 175g each, 1" thick) in carbon steel pan. Cooked in oven on pan at 300-400f until internal temp hit 140f. Took out and let rest for 5 minutes and temperature went up to 159f. Was cooked through, maybe a bit too much, but still very good. Try taking it out at 130f next time so it gets to 145-150f instead.
