IP Hummus by Rich Lum
Ingredients
  • 1 cup dry un soaked garbanzo beans
  • 1 cup veggie broth
  • 2 cloves sliced garlic
  • 10 to 15 whole peppercorns
  • I Tablespoon cumin
  • 1 teaspoon salt
  • 1 bay leaf
  • 4 cups of water
  •  
  • 1 head roasted garlic
  • Juice of half a lemon
  • Salt
  • Olive oil
Steps
  1. Add garbanzo beans, broth, bay leaf, spices and the water to your pot.
  2. Close and seal your lid
  3. Set your pot to manual or bean for 45 minutes
  4. Allow for a 10 minute NPR
  5. Strain the beans...discard all the peppercorns and bay leaf
  6. Put the beans in a food processor
  7. Add a ¼ teaspoon of salt. 2 teaspoons of olive oil, the whole head of roasted garlic, about ¼ cup of the cooking liquid and the lemon juice
  8. Pulse a few times then process until smooth..add more cooking liquid as needed
Notes
  • Optional.. Tahini...roasted red peppers...Hatch chilies...beets.
  • To make Tahini I use my stick blender processing bowl. Add toasted sesame seeds and toasted sesame oil and blend for a few minutes. Add seeds and oil until you get the amount you need
  • Save and freeze the cooking liquid in 1 cup portions. I’ll use it for the next batch
