Egg Avocado Salad

Ingredients
  • 2 hard-boiled eggs
  • ½ avocado
  • 1 Tbsp chives or green onion, chopped finely
  • ¼ tsp paprika
  • Juice of half a lemon
  • Salt, pepper to taste
Steps
  1. Chop eggs.
  2. Mash avocado and combine with chopped eggs.
  3. Add chopped chives or onions and just enough juice from half lemon to help hold it together. Season with paprika, salt and pepper.
