I could eat this all day long
Ingredients
  • 3 T butter
  • 3 to 4 T minced celery
  • 1 whole green pepper, finely chopped
  • 2 large tomatoes or equivalent (lots of medium sized)
  •  
  • subheading: Options:
  • Chopped Okra (add at beginning so that it cooks through)
  • Minced Garlic (add toward the end)
  • Minced chopped hot pepper - any kind
  • Chopped onion
  • Chopped zucchini
  • Chopped yellow squash
  • Oregano
Steps
  1. Melt butter
  2. Add minced celery and cook for 5 minutes
  3. Add chopped green peppers and cook another 10 minutes
  4. Quarter the tomatoes and add to pan.
  5. Add ½ tsp salt
  6. Add ½ tsp Hungarian paprika
  7. Cover and cook another 10 minutes or until all vegetables are soft.
Notes
  • These are good piled on top of halved cooked acorn squash or other winter squash.
