Butternut Squash Alfredo
Ingredients
  • ½ teaspoon salt, divided, plus more to taste
  • 2 cups diced butternut squash
  • 1 teaspoon olive oil
  • ⅛ teaspoon pepper
  • 8 ounces linguine (I used the garlic linguine from Trader Joe's)
  • ¾ cup half and half
  • 1 cup grated parmesan cheese, plus more for garnish
