Ingredients
- ½ cup flaked coconut
- ½ cup sliced almonds
- ½ cup brown sweetener
- ⅓ cup collagen peptides
- ½ cup nut butter, slightly melted
- 1 large egg
- 1 tsp maple extract (sub out for banana extract)
- ½ tsp vanilla extract
Steps
- Preheat the oven to 350F Line a cookie sheet (with rim) with parchment paper
- Add the coconut and almonds to a food processor, and grind until the are about "oat" sized
- Add the other dry ingredients, and pulse a few more times
- Mix wet ingredients in a med mixing bow, add dry mix and combine well.
- Make balls or use a cookie scoop to divide dough (divide into 6 balls)
- Place on the cookie sheet and press down to about ½ inch thick.
- Bake 15 to 20 minutes, until golden
- Remove and let cool completely on the pan. Cookies will reabsorb the melted butter as they cool.
- Can also be pressed into 8x8 pan and made into bars
