Breakfast Cookies

Ingredients
  • ½ cup flaked coconut
  • ½ cup sliced almonds
  • ½ cup brown sweetener
  • ⅓ cup collagen peptides
  • ½ cup nut butter, slightly melted
  • 1 large egg
  • 1 tsp maple extract (sub out for banana extract)
  • ½ tsp vanilla extract
Steps
  1. Preheat the oven to 350F Line a cookie sheet (with rim) with parchment paper
  2. Add the coconut and almonds to a food processor, and grind until the are about "oat" sized
  3. Add the other dry ingredients, and pulse a few more times
  4. Mix wet ingredients in a med mixing bow, add dry mix and combine well.
  5. Make balls or use a cookie scoop to divide dough (divide into 6 balls)
  6. Place on the cookie sheet and press down to about ½ inch thick.
  7. Bake 15 to 20 minutes, until golden
  8. Remove and let cool completely on the pan. Cookies will reabsorb the melted butter as they cool.
  9. Can also be pressed into 8x8 pan and made into bars
