Ingredients
  • 1 Tablespoon olive oil
  • 1 shallot , minced (or ½ of an onion minced)
  • 4 cloves garlic , minced
  • 1 pound ground turkey
  • 3 to 4 large carrots, sliced into ¼ inch rounds
  • 1 piece/rib of celery, sliced into ¼ inch rounds
  • 1 pound yellow potatoes, diced into 1 inch sized cubes
  • 1 teaspoon dried parsley
  • ½ teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ teaspoon dried oregano
  • 1 teaspoon nutritional yeast, (optional but adds great flavor)
  • ½ teaspoon rubbed sage
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 6 cups chicken broth
  • 1 cup almond milk
  • 1 cup fresh or frozen peas
  • ¾ cup white rice, (I used basmati)
