Instant Pot Chicken & Dumplings

Ingredients
  • 3 large boneless skinless chicken breasts
  • 1 cup diced onion
  • 2 cups chopped celery
  • 2 cups chopped carrots
  • 1 medium potato, peeled & chopped
  • 6 cloves garlic, diced
  • 2 tbsp butter
  • 3 tbsp flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried dill
  • 1 tsp poultry seasoning
  • 5 cups chicken broth
  • 1 cup heavy cream
  •  
  • Dumplings:
  • 1 cup flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1 tbsp butter
  • 1/2 cup buttermilk
Steps
  1. Dumplings:
  2. Add dry ingredients to bowl & whisk together.
  3. Cut in butter with pastry cutter or fork until crumbly.
  4. Add buttermilk & blend together to form a dough.
  5. Form dough into small round balls/globs (I made 20).
  6. Set aside.
  7. Set Instant Pot on Saute.
  8. When hot add butter, onions, celery & carrots.
  9. Saute until softened (5-7 minutes).
  10. Add garlic & saute another minute.
  11. Add flour & saute 1 minute while stirring.
  12. Press Cancel to turn off pot.
  13. Add broth & scrape off anything stuck to bottom of pot.
  14. Add chicken.
  15. Cook on Manual/Pressure Cook (High Pressure) 10 mins;
  16. 10 minute Natural Pressure Release.
  17. Remove chicken, shred & return to pot.
  18. Add potatoes.
  19. Drop dumplings on top of broth.
  20. Cook on Manual/Pressure Cook (High Pressure) for 5 mins;
  21. 5 minute Natural Pressure Release.
  22. Remove lid, gently stir in heavy cream.
Notes
  • -Made in a 6qt Instant Pot. 
  • -I used homemade broth. If using canned broth or bouillon you may want to add less salt. 
  • -If you want peas in yours add them in after pressure cooking when you add the heavy cream.
