Bourbon-Spiked Chocolate Pecan Pie
Ingredients
  • 1 recipe pie dough (recipe follows)
  • subheading: For the filling:
  • 3 cups pecans (8 ounces)
  • 4 large eggs
  • ¾ cup dark brown sugar
  • ⅔ cup light corn syrup or honey
  • 1 teaspoon vanilla extract
  • 3 tablespoons unsalted butter, melted
  • 2 to 3 tablespoons bourbon
  • ¾ teaspoon salt
  • ¾ cup semisweet or bittersweet chocolate chips or chunks
  • Optional: Finishing salt, such as Maldon or Alaska Pure flake salt
  • subheading: For the pie crust:
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • 2 teaspoons granulated sugar
  • 1 cup cold unsalted butter, cut into pieces (about 16)
  • 1 large egg yolk (save the white for the egg wash)
  • 3 to 4 tablespoons ice cold milk (or water)
