This is a dessert with a difference. It has 3 Options for toppings. So in that sense, this Recipe is flexible. Plus, you can also make a Chilli Sauce to serve with the Tofu for a Savory dish if you like. This Rice Tofu is made very differently to other Tofu. Read Notes >>>
Ingredients
  • FOR RICE TOFU
  • 1. Mix together the rice, the calcium hydroxide, and enough water to come up about ~1cm above the rice. Let it soak for ~3 hours.

  • 2. Rinse the rice ~10 times, or until the water runs completely clear.
  •  
  • 3. Blend together with 250mL of water, scraping once or twice.
  •  
  • 4. If going for the jiggly rice tofu, add the extra water now and mix well.
  •  
  • 5. Cook the rice tofu. First heat it up until it's beginning to clump. ~53C, then swap the flame to medium low. Continue to cook for 10 to 15 minutes, stirring constantly, until the starch tastes cooked (a bit like a boba), and the rice batter develops a sort of sheen.

  • 6. Pour into a bowl, toss in the fridge for at least four hours, or overnight. Then cut in squares or strips.

  • FOR APRICOT SAUCE
  • 1 tsp cornstarch (2.5 g)
  • 1 cup apricot nectar (240 ml)
  • 3 tsp coconut sugar
  • 1 tsp lemon juice
  • ¼ tsp cinnamon
  • ¼ tsp ginger powder
  • 1 pinch of chilli flakes
  • 2 to 3 tblsp coarsely shredded coconut,
  • almond flakes or 2 tiny pieces of angelica
  • per serve

  8. FOR APRICOT SAUCE
  9. This recipe uses 1 cup (240 ml) of fruit juice, however you can alter the measurements so the ratio stays the same. For example, if your recipe called for 2 cups (470 ml) of fruit juice, you'd mix together {{convert|2|tbsp|ml|abbr=on} each of water and cornstarch.
  10. Add the cornstarch mixture to the fruit juice. Once the water and cornstarch are thoroughly combined, pour them into another bowl that has 1 cup (240 ml) of fruit juice in it. Stir all 3 ingredients together so they’re mixed well. Avoid adding cornstarch to hot fruit juice so it doesn't clump.
  11. Gently, but not too slowly, stir fruit juice in a saucepan over a medium flame until it’s thick and starts to bubble. Pour the fruit juice mixture into a pan and bring the flame to medium. Stir the fruit juice as it heats and watch for bubbles to start forming in the juice. These bubbles mean that the juice is thickening.
  12. It shouldn't take longer than 5 minutes in total for the liquid to bubble.
  13. Continue to stir the fruit juice for 2 more minutes to cook the cornstarch, so the consistency of the Sauce is right and it doesn't alter the taste of the ingredients. That way you won't be left with a cornstarch flavor. Remember to let the fruit juice mixture keeping cooking for 2 more minutes before it is done.
  14. If your fruit juice is heated or stirred for too long, it can start to lose its thickness, so judge it carefully.
  15. When Sauce is ready, pour some over separate serves of the Tofu and sprinkle a little Corsley shredded Coconut on top. Or Flaked Almonds.
  16. Tip: Cornstarch works best if it's mixed in with other dry ingredients first. So you may like to add the juice gradually to the dry ingredients. See what suits you best.
