  • 4 scallions (white and green parts), diced
  • ½ c extra virgin olive oil
  • 2 red bell peppers, cored, seeded and cut into strips
  • 1 carrot, peeled and cut into thin strips
  • ¼ c fresh lime juice
  • salt and pepper to taste
  • ¼ c fresh cilantro, chopped
