Ingredients

- 2 T garlic, minced
- 2 T cumin, ground
- 1 T red pepper flakes
- 1½ T each kosher salt, black pepper and brown sugar

- 1 jicama, peeled & diced***
- 3 ears corn, husked
- ½ head white cabbage, cored and shredded
- 4 scallions (white and green parts), diced
- ½ c extra virgin olive oil
- 2 red bell peppers, cored, seeded and cut into strips
- 1 carrot, peeled and cut into thin strips
- ¼ c fresh lime juice
- salt and pepper to taste
- ¼ c fresh cilantro, chopped
