Quinoa Fried Rice (One Pot)
Ingredients
  • 1 TBS olive oil divided
  • 2 eggs
  • 2 cloves garlic minced
  • 1 small onion diced
  • 1 TBS ginger grated
  • 8 ounces baby bella mushrooms chopped
  • 2 cups chopped broccoli (frozen or fresh) chopped
  • ½ cup grated carrots
  • 1 zucchini chopped
  • 1 ½ cups quinoa, rinsed and patted dry
  • 2 ½ cups water
  • ½ cup frozen corn
  • ½ cup frozen peas
  • 3 TBS lower sodium soy sauce
  • 4 stalks green onions chopped
