Ingredients
  • ⅔ cup pureed pumpkin
  • ¼ cup peanut butter
  • 2 large eggs
  • grated cheese
  • 3 cups wholemeal flour, or more as needed
Steps
  1. Preheat oven to 180°C. Line a baking sheet with baking paper and set aside.
  2. Beat pumpkin puree, peanut butter, cheese and eggs on medium-high until well combined.
  3. Gradually add 2½ cups flour at low speed, beating until just incorporated. Add the additional ¼ cup of flour, a little at a time until the dough is no longer sticky.
  4. Working on a lightly floured surface, knead the dough 3 or 4 times until it comes together.
  5. Using a rolling pin, roll out to ¼ inch thickness. Using cookie cutter, cut out dough into desired shapes and place on prepared baking tray.
  6. Bake in oven until edges are just lightly golden brown, about 20 to 25 minutes.
