Ingredients
- Fresh lime juice, enough to cover the meat in a Ziploc bag
- Lots of salt, adjust to taste, but I used enough for it to be like a brine
- Pinch each of sage, thyme, and garlic.
- About half as much Olive oil as lime juice
Steps
- Put it all together in a bag, get all of the air out, and shake it, then put it in the fridge at least overnight.
- Cook it on medium heat, don't oil the pan.
Notes
- As far as condiments for it, Valentina hot sauce goes really well with it. It's 88 cents for a pint bottle of it here.
- Also, shredded queso fresco, provolone, any white cheese basically goes well with it
