TJ's Beef Lime Fajitas

Fresh lime juice, enough to cover the meat in a Ziploc bag

Lots of salt, adjust to taste, but I used enough for it to be like a brine

Pinch each of sage, thyme, and garlic.

About half as much Olive oil as lime juice

Put it all together in a bag, get all of the air out, and shake it, then put it in the fridge at least overnight.

Cook it on medium heat, don't oil the pan.

As far as condiments for it, Valentina hot sauce goes really well with it. It's 88 cents for a pint bottle of it here.

Also, shredded queso fresco, provolone, any white cheese basically goes well with it
