Mexican choc rice pudding
Ingredients
  • 200 g sushi or arborio rice
  • 350 ml water
  • 475 ml soy milk
  • 4 tbsp cocoa
  • ΒΌ tsp cinnamon
  • 50 g plain choc
  • 5 tbsp maple syrup
  • 1 tsp vanilla
Steps
  1. Place rinsed rice, water and 350mlmulk in small pan. Cover and bring to boil.
  2. Lower heat and simmer for 10 min til rice nearly cooked.
  3. Add cocoa,cinnamon and choc. Stir til combined and choc melted.
  4. Add rest of milk, maple syrup and vanilla. Stir for 5 min over low heat.
  5. Chill for hour and serve.
