  • 30 ml oil
  • 1 (about 500g) rump steak
  • 1 onion, thinly sliced

  • 2 lemongrass stalks, bruised
  • 2 kaffir lime leaves, finely sliced
  • 400 ml coconut milk
  • 90 ml red curry paste
  • 375 ml beef stock
  • 1 lime, zest and juice
  • 3 tbsp brown sugar
  • 200 g sugar snap peas
  • 400g sweet potato , peeled and cut into bite-sized pieces
  • 75 g roasted peanuts , crumbled
  • salt and pepper, to taste
  • fresh coriander leaves, to garnish
