Ingredients
- 1 small onion, sliced
- 1 package cremini mushrooms, sliced
- 3 cloves garlic, minced
- 2 T butter or bacon fat
- 2 tsp smoked paprika
- 2 ½ cups chicken broth or bone broth, divided
- 2 dashes Worcestershire sauce
- 1 tsp soy sauce
- 1 tablespoon Dijon mustard
- 1 ½ cups sour cream
- 2 cups broccoli florets
- 1 package Just Chicken pre-cooked chicken from Trader Joe’s (or fresh chicken, sliced and sautéed)
- 2 tsp red wine vinegar
- 1 tsp glucomannan
- Salt and pepper
Steps
- In a large skillet, sauté onion and mushrooms in butter until golden. Add garlic, stir for 30 seconds.
- Add smoked paprika and stir.
- Add 2 cups broth and stir to deglaze pan. Add W sauce and soy sauce.
- Add broccoli and cover. Simmer a couple of minutes.
- Add chicken and simmer a couple of minutes to warm.
- Add mustard, sour cream. Stir to blend.
- In a small bowl, whisk glucomannan in ½ cup broth. Quickly add mix to the Stroganoff and stir to blend. Simmer a couple of minutes until thickened. Add salt and pepper to taste.
