Keto Chicken Stroganoff

Ingredients
  • 1 small onion, sliced
  • 1 package cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 T butter or bacon fat
  • 2 tsp smoked paprika
  • 2 ½ cups chicken broth or bone broth, divided
  • 2 dashes Worcestershire sauce
  • 1 tsp soy sauce
  • 1 tablespoon Dijon mustard
  • 1 ½ cups sour cream
  • 2 cups broccoli florets
  • 1 package Just Chicken pre-cooked chicken from Trader Joe’s (or fresh chicken, sliced and sautéed)
  • 2 tsp red wine vinegar
  • 1 tsp glucomannan
  • Salt and pepper
Steps
  1. In a large skillet, sauté onion and mushrooms in butter until golden. Add garlic, stir for 30 seconds.
  2. Add smoked paprika and stir.
  3. Add 2 cups broth and stir to deglaze pan. Add W sauce and soy sauce.
  4. Add broccoli and cover.  Simmer a couple of minutes.
  5. Add chicken and simmer a couple of minutes to warm.
  6. Add mustard, sour cream. Stir to blend.
  7. In a small bowl, whisk glucomannan in ½ cup broth. Quickly add mix to the Stroganoff and stir to blend. Simmer a couple of minutes until thickened. Add salt and pepper to taste.
