Turkey Salad Bowls with Spicy Pickled Vegetables, Roasted Peppers and Onions, and Cilantro-Lime Sour Cream
Ingredients

  • 1 pound ground turkey

  • Chili powder, cumin, garlic powder, cayenne powder, salt, and pepper, to taste

  • 1 cup white distilled vinegar
  • 3 tablespoons sugar (more or less, to taste)
  • Sprinkle of salt

  • 2 red bell peppers
  • 1 to 2 poblano peppers
  • ¾ red onion (Use the remaining ¾ onion from the pickled vegetables)
  • Olive oil
  • Salt and pepper to taste
  • subheading: Cilantro-Lime Sour Cream:
  • 3 tablespoons sour cream
  • 1 to 2 tablespoon heavy cream
  • ¾ cup fresh cilantro
  • 1 lime
  • Salt to taste
  • subheading: Salad:
  • 4 cups mixed greens
  • 8 to 10 cherry tomatoes, for serving
  • Lime wedges, optional, for serving
  • 1 avocado, for serving
