Tender Grilled Asian Chicken Skewers

  • 5 cloves garlic - minced
  • 2 large zucchini squash - sliced
  • 3 large bell peppers (any color) - cubed
  • 1 large red onion - cubed
  • rice or cauliflower rice - to serve
