Creamy Chicken Soup
Ingredients
  • 2 tbsp butter
  • ½ onion, chopped
  • 8 oz cream cheese, softened
  • 2 tsp garlic, minced
  • 4 cups chicken broth
  • 4 cups spinach, chopped
  • 4 cups chicken, shredded
  • ½ tsp dill, dried
  • ⅓ cup bacon, crumbled
  • ½ cup heavy cream
Steps
  1. Heat the butter in a pot over medium heat.
  2. Add the onions and sauté until softened.
  3. Add the garlic and sauté another 30 seconds.
  4. Add in the cream cheese and continue to heat, stirring often, until the cheese is completely melted.
  5. Slowly whisk in the chicken broth a little at a time.
  6. Add in the salt and pepper to taste as well as the dill.
  7. Place the spinach in the pot and simmer covered until the spinach has wilted.
  8. Mix the shredded chicken into the soup and simmer for 10 minutes.
  9. Stir in the heavy whipping cream and bacon, simmer for another 5 minutes and serve topped with chopped green onions.
