Savory Pumpkin Pie (vegan) (oil-free) (gluten-free)

Ingredients
  • 1 Mashed Potato Pizza Crust (vegan) (use mashed potato pizza crust recipe, smash it in a 9" round pan and bake at 400F for 30 minutes) There will be some leftover
  •  
  • 1 ⅓ cups garbanzo bean flour
  • 2 cups warm water (use liquid from mushrooms for part)
  • ½ tsp salt
  • 1 tsp cumin
  • ½ tsp onion powder
  • ½ tsp turmeric
  • ¼ tsp black pepper
  •  
  • 2 tsp baking powder
  •  
  • 2 cups roasted pumpkin, large dice (1 inch)
  • 2 8 oz cans sliced mushrooms, drained
Steps
  1. Make and bake the crust. Set aside.
  2. Whisk together garbanzo flour, water and spices and allow to set for 30 minutes
  3. Add baking powder and stir well
  4. Fold in pumpkin and mushrooms
  5. Pour filling into crust and bake at 400F for 1 hour
  6. Allow to cool completely, overnight is best. Reheat at 375F for 30 minutes before serving
