Ingredients
- 1 Mashed Potato Pizza Crust (vegan) (use mashed potato pizza crust recipe, smash it in a 9" round pan and bake at 400F for 30 minutes) There will be some leftover
- 1 ⅓ cups garbanzo bean flour
- 2 cups warm water (use liquid from mushrooms for part)
- ½ tsp salt
- 1 tsp cumin
- ½ tsp onion powder
- ½ tsp turmeric
- ¼ tsp black pepper
- 2 tsp baking powder
- 2 cups roasted pumpkin, large dice (1 inch)
- 2 8 oz cans sliced mushrooms, drained
Steps
- Make and bake the crust. Set aside.
- Whisk together garbanzo flour, water and spices and allow to set for 30 minutes
- Add baking powder and stir well
- Fold in pumpkin and mushrooms
- Pour filling into crust and bake at 400F for 1 hour
- Allow to cool completely, overnight is best. Reheat at 375F for 30 minutes before serving
