Kale and Peanut Pesto Spaghetti
Ingredients
  • 400g/14oz spaghetti
  • 150 to 200g/5½-7oz kale, large stalks removed and roughly chopped
  • 100g/3½oz salted, roasted peanuts
  • 1 to 2 garlic cloves, to taste
  • 4 tbsp finely grated Grana Padano, Parmesan or vegetarian alternative, plus extra to serve
  • 2 tbsp olive oil
  • salt and freshly ground black pepper
