Simple Shrimp Scampi with Zoodle

Ingredients
  • 2 teaspoon olive oil
  • 1 Tbsp garlic, minced
  • 1 small lemon,  zested and juice
  • ½ cup(s) dry white wine (or ½ cup vegetable broth)
  • ¾ Lb shrimp, peeled and deveined
  • 2 to 3  Zucchini Spirals Noodles
  • 1 tsp salted butter (or Ghee)
  • 1 Tbsp parsley, chopped
Steps
  1. Heat oil in a large nonstick skillet.
  2. Add garlic, and cook until fragrant.
  3. Add lemon juice and zest, white wine (or vegetable broth), and reduce by half.
  4. Add shrimp, and cook for several more minutes until done.
  5. Add zucchini spirals noodles
  6. Add butter, toss a few times to coat spirals, garnish with parsley and serve.

  • Containers:  1 Red, 1 Green, 1 teaspoon
