  • 1 pound fresh chanterelles
  • 2 tablespoons sherry vinegar
  • 1 tablespoon freshly squeezed lemon juice
  • 1 cup vegetable stock
  • ½ teaspoon finely chopped fresh rosemary
  • 1 teaspoon finely chopped fresh thyme
  • 1 tablespoon chopped flat leaf parsley
  • 1 tablespoon cold butter
  • ¼ teaspoon kosher salt
  • Freshly ground pepper, to taste
  • 4 slices toasted sourdough, for serving
  • 4 tablespoons shaved vegetarian Parmesan
