Slow Cooker Squash & Ground Beef Curry {Paleo & Aip}
Ingredients
  • subheading: For the ground beef curry:
  • 2 pounds ground beef (preferably grass-fed)
  • 1 large acorn squash, cut into ½ inch cubes (you can also use 3 cups of another winter squash, cubed)
  • 1 can coconut milk
  • 1 can pumpkin puree
  • 1 ½ cups water
  • 2 tablespoons curry powder, or all of the below AIP curry blend
  • 1 ½ inch fresh ginger, peeled and diced
  • 4 to 6 garlic cloves
  • 1 lemon, quartered
  • fresh cilantro for topping, optional

  • ½ tablespoon garlic powder
  • ½ tablespoon onion powder
  • ½ tablespoon turmeric powder
  • 1 teaspoon dried cilantro
  • 1 teaspoon dried basil
  • 1 teaspoon dried dill
  • 1 teaspoon cinnamon
  • ½ teaspoon ginger powder
  • ¼ teaspoon ground cloves
