  • Verginia Skrubutonis Yakas For those wanting it again....here is my Cepelinai recipe : as promised here is my recipe for cepelinai: Ingredients.... 15 lbs Idaho potatoes, 2 large onions, 1lb ground beef, 1lb skinless smoked sausage 1 egg, salt n pepper to taste, 2 lbs bacon and sour cream. Night before using an old fashioned meat grinder, I grate the smoked sausage and 1 onion together. Add smoked sausage n onion to ground beef, season w/salt n pepper (optional), add egg and mix well. Form meat into small meatloaves that will fit inside the potato. Place on cookie sheet and bake at 350 till done about 20 to 30 minute. Cool and put in baggie, refrigerate till ready to use. Peel potatoes and keep in cold water till ready to use. Next day I take 4 to 5 peeled potatoes, cut and boil. Mash them when done (plain no butter) set aside to cool. Grate potatoes, drain DO NOT put starch back in. Using a cloth, ring water out of potatoes. Mix well boiled w/grated potatoes . I use my hands. Form patties, place meat into center and fold potato patty...make sure well sealed. Drop into boiling salted water, when they float to top, cook an additional 25 minutes. Place on parchment paper on cookie sheet till cooled. While cooling or before grating, sautee diced. bacon with remaining onion. Serve with bacon n sour cream or I place bacon over cepelinai and package for freezing. Enjoy
