Ingredients
  • subheading: Tzatziki Sauce:
  • 6 oz firm silken tofu (½ carton) or greek yogurt
  • 2 garlic cloves (or ¼ of garlic powder)
  • 1½ tbsp lemon juice
  • 1½ tsp white wine vinegar
  • ¼ tsp salt
  • pinch pepper
  • ½ cucumber, peeled and grated
  • 1 tbsp chopped fresh dill, chopped
  •  
  • subheading: Marinade/Cooking Broth:
  • 1 cup water
  • 1 tbsp chili powder
  • 1½ tsp ground coriander
  • 1½ tsp ground cumin
  • 1½ tsp paprika
  • 1½ tsp garlic powder
  • 1½ tsp dried parsley
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ⅛ tsp ground cinnamon
  • 1 tbsp light soy sauce)
  • 1 tbsp maple syrup
  •  
  • subheading: Protein:
  • 45 grams Soy Curls
  • 3 ounces slice chicken breast (+ ⅛ tsp salt)
  •  
  • subheading: To make gyros:
  • Pita bread
  • cucumber slices
  • lettuce, chopped
  • purple onion
  • tomatoes
Steps
  1. subheading: To make the Tzatziki Sauce:
  2. Make the sauce first and as early as possible; to give the flavors time to blend. This REALLY tastes better the next day, no question. Grate the cucumber and squeeze all the juice out with your hand and set is aside on some paper towel or sit in a colander to further dry out.
  3. Stir all the ingredients together and set it in the fridge.
  4. subheading: To make the soy curls:
  5. Mix the dry spices together, remove 1 tablespoon and set aside for the chicken.
  6. Put the remaining spices in a pot with the water and bring to boil. Reduce heat and let simmer for a couple of minutes.
  7. Put in the Soy Curls and simmer well for 8 minutes.
  8. Pour into a strainer to cool and dry a little and reserve the broth.
  9. Place a pan over medium heat and cook the Soy Curls for 4-ish minutes each side, until they form a little crust.
  10. subheading: To make the chicken:
  11. Mix 2 tsps of oil into the chicken and mix in 2 tsp of the reserved spice. Check and see if it's enough before adding the final teaspoon.
  12. Place some oil in a pan and cook chicken until no longer pink. Add a couple of tablespoons of the broth and stir into the chicken along with ⅓rd of the soy curls.
  13. subheading: Assemble gyro:
  14. Put the Tzatziki sauce on some pita and layer the lettuce, tomatoes, onions and soy curls. Top with additional Tzatziki sauce and fresh dill.
