Fresh Herb Butter-Basted Turkey

  • ¼ cup fresh sage leaves, plus 1 tablespoon finely chopped
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1 cup dry white wine
