One-Pot Beef Stroganoff
Ingredients
  • 1 pound (450g) lean ground beef
  • 8 oz (225g)  shiitake mushrooms (or cremini), sliced
  • ½  onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • Kosher salt and freshly ground black pepper, to taste
  • ½ teaspoon dried thyme
  • 3 tablespoons all-purpose flour
  • ¼ cup red wine (or dry white wine)
  • 4 cups (1l) low-sodium beef stock
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 8 oz (225g) pasta, uncooked
  • ½ cup heavy whipping cream
  • 2 tablespoons chopped fresh parsley, for garnish
  • ½ teaspoon red chili pepper flakes, optional
