CREAMED SPINACH

Ingredients
  • 2 bags chopped frozen spinach
  • 1 Boursin Garlic soft cheese
  • ½ Cream Cheese brick or soft container
  • ½ C Butter, clarified if possible or melted
  • S & P to taste
  • Parmigiano-Reggiano Cheese - freshly grated
Steps
  1. Heat a non-stick skillet over medium-high heat
  2. Add frozen bags of spinach to pan and cook, picking out any tough ends, till done to your taste
  3. Add cream cheese, stir to melt
  4. Add Boursin cheese, stir to melt
  5. Add butter, stir to incorporate all additions
  6. S& P to taste
  7. Grate cheese (a lot) over top and mix thoroughly, set aside but keep warm
Notes
  • If needed, add chicken broth to pan if too dry.
