Risotto Boscaiola (Quick Cook)

1 onion, finely chopped

3 cloves garlic, crushed

4 bacon rashers, rindless cut into strips

10 mushrooms, sliced

500 g arborio rice (Sunrice par-cooked packets)

1½ cups chicken stock (liquid) hot

¾ cup parmesan grated

3 tbs light sour cream, optional

1 tsp fresh flat-leaf parsley *to decorate
