Tofu Polenta Scramble
Ingredients
  • -Two 14 oz blocks firm or extra firm tofu
  • -One polenta tube, store bought
  • -¼ to ½ cup nutritional yeast
  • -⅛ teaspoon powdered garlic
  • -dash turmeric
  • -dash onion powder
Steps
  1. Place tofu and polenta into large sauce pan and heat on medium.
  2. Use spatula to break up into smaller pieces (will continue to break up more and more as it heats).
  3. Add rest of ingredients and continue to stir until heated completely and broken down into small pieces.
  4. The nutritional yeast should be added slowly, to taste.
  5. Top with freshly ground pepper and salt alternative such as ground sumac berries. Enjoy!
