  • 8 cups baby spinach

  • 1 large avocado, diced
  • ¼ cup crumbled feta, optional
  • juice from two lemons (approx ¼ cup
  • ¼ cup oil (i use avocado)
  • ¼ cup  white wine vinegar
  • 1 Tbps poppy seeds (or chia seeds)
  • 2 tsp sugar (or to taste)
  • optional protein: chicken, steak, lentils, chickpeas, hard boiled eggs
