Ingredients
  • subheading: The pancake:
  • 1 ¾ cup rice flour
  • 2 cups water
  • ¼ tsp turmeric
  • 1 green onion, sliced
  • 1 lb shrimp
  • 1 onion, thinly sliced
  • 1 dozen sliced mushrooms
  • 2 cups bean sprouts
  • salt and pepper
  • Vegetable oil
  • subheading: Dipping sauce:
  • 1 red chili, minced
  • ¼ cup fish sauce
  • ¼ cup fresh lime juice
  • 1 small carrot, shredded
  • 2 cloves garlic, minced
  • ½ cup sugar
Steps
  1. Mix sauce ingredients, and set aside
  2. Mix, flour, water, turmeric, green onions, and set aside
  3. Mix, shrimp, onion, mushrooms
  4. For each pancake heat 1 tablespoon oil over high heat
  5. Add a small portion of the shrimp mix and season with salt and pepper
  6. Cook until onion starts to brown
  7. Pour batter over this mix and cook and until browned
  8. You will be tempted, but do not flip
  9. Spread bean sprouts on top and fold the pancake in half and serve with the dipping sauce
