  • 8 ounces button mushrooms (thinly sliced)
  • 8 ounces cremini mushrooms (thinly sliced)
  • 3 tablespoons all-purpose flour
  • 2 ½ cups whole milk
  • ⅓ cup sour cream
  • 1 tablespoon Dijon mustard
  • 8 ounces mozzarella (coarsely grated)
  • 4 ounces Fontina cheese (coarsely grated)
  • 2 ounces Parmigiano-Reggiano cheese (finely grated)
  • 1 cup frozen peas (thawed)
  • ⅔ cup panko
