Roasted Hatch Chile Peach Salsa
Ingredients
  • 1 cup roasted hatch chiles, (click here for How to Roast Peppers) seeds and stems removed and cut into a small dice
  • 1 cup red onion, finely chopped
  • 2 cups fresh white peaches, washed and dried, finely chopped
  • ΒΌ cup cilantro, washed and dried, finely chopped
  • 2 tablespoons fresh lime juice
  • salt and sugar to taste
