Sweet Potato Fries

Ingredients
  • 2 pounds (2 large, 3 medium) sweet potatoes
  • 1 egg white, whisked
  • 2 tbsp extra-virgin olive oil
  • 1½ tbsp curry powder
  • ¾ tsp fine sea salt
  • ¼ tsp freshly ground black pepper
  • ¼ tsp ground red pepper
Steps
  1. Preheat oven 400 degrees. Line 2 baking sheets with parchment paper.
  2. Cut potatoes into sticks ¼ to ½ inch wide. Place fries in large mixing bowl and toss with egg white and oil.
  3. In small bowl, mix curry, salt, pepper, and red pepper. Sprinkle seasoning over fries and toss evenly.
  4. Spread on baking sheet. Bake 20 minutes, flip, bake another 10 minutes.
