Easy Old Fashioned Canned Carrot Cake
using canned carrots
Ingredients

  • ¾ cup vegetable oil

  • 4 eggs
  • 2 cups flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 8-oz can crushed pineapple, drained (optional)
  • ½ cup chopped pecans or walnuts (optional)

  • 8 oz cream cheese, softened
  • 1 stick of butter (½ cup), softened
  • 3 ¼ cup powdered sugar, sifted
  • 1 tsp vanilla
  • 2 Tbsp heavy cream
