Çılbır (Turkish fried eggs)
Pronouned chil-bir is Turkish fried eggs over garlicky yogurt, usually spicy.

Ingredients
  • 1 cup plain greek yogurt
  • ¼ cup spicy chili oil (less or more to taste)
  • 2 tablespoon fresh dill chopped
  • 2 tablespoon fresh parsley chopped
  • 2 or more to your liking cloves garlic minced or grated
  • salt + pepper to taste
  • 2 eggs
  • 4 pieces naan or toast
  • zest from 1 lemon (optional)
  • ¼ cup sun-dried tomato pesto homemade or store-bought (optional but very good)
  • 4 ounces goat/feta cheese crumbled
  • Fresh dill or cilantro, for serving
  •  
  • subheading: SPICY BUTTER SAUCE (if you don't mix in the spicy chili oil this is a good alternative):
  • 2 tablespoons butter
  • 2 tablespoons coconut oil
  • 1 to 2 teaspoon crushed red pepper flakes
  • ½ teaspoon sweet paprika
Steps
  1. In a bowl, mix together the greek yogurt, spicy chili oil, dill, parsley, garlic and a pinch of salt + pepper. Stir until combined. Keep stored in the fridge until ready to use.
  2. Heat a skillet with a little olive oil or butter over medium-high heat and fry the eggs to your liking.
  3. Spread the yogurt sauce over you plate. Swirl 1 to 2 tablespoons of the sun-dried tomato pesto and chili oil into the yogurt. Next add 1 to 2 eggs per piece of naan or toast. Sprinkle each piece with lemon zest and fresh cilantro. Drizzle the spicy butter sauce (recipe below) over the eggs. Garnish with fresh herbs, and some crumbled goat cheese.

  5. In a small saucepan, melt together the butter, coconut oil, crushed red pepper flakes and paprika. Drizzle the warm sauce over the fried eggs.
