Nourishing White Bean and Lemon Soup
  • 2 (15-oz.) cans cannellini beans, rinsed and drained
  • 4 cups lower-sodium vegetable broth divided
  • 2 Tbsp. extra-virgin olive oil
  • 1 yellow onion finely chopped
  • 2 large carrots finely chopped
  • 1 tsp. each salt and cracked black pepper
  • 4 garlic cloves minced
  • 1 (15-oz.) can chickpeas, rinsed and drained
  • 1 Tbsp. finely chopped fresh rosemary
  • 1 small bunch escarole, roughly chopped (sub lacinato kale or chard)
  • Zest and juice of 1 lemon
  • ⅓ cup grated Parmesan cheese plus more for garnish
