Homemade Italian Sausage Seasoning {Easy from Scratch Spice Mix}

If you like to make your own Italian sausage this is great to have on hand. You can adjust the ingredients to your own taste.
Servings: Enough for 10 pounds of meat. Use about 4 ½ Tbsp of the mix for every 2 pounds.

Ingredients
- 3 Tbsp (⅓ cup) dried parsley
- 3 Tbsp (⅓ cup) Italian seasoning or 1 ½ (3) Tbsp each of dried oregano and basil
- 2 Tbsp (¼ cup) black pepper (¼ cup)
- 3 Tbsp (⅓ cup) fennel seed (you can use whole, but I like to crush some of the whole seeds to intensify the flavor)
- 2 Tbsp (¼ cup) ground sage
- ¼ cup (½ cup) paprika
- 2 Tbsp (¼ cup) red pepper flakes. (¼ cup) Start out with less and add more if you want it hotter after the taste test.
- 1 ½ Tbsp (3) salt
- 1 (2) tsp granulated garlic
- 1 (2) tsp granulated onion
- ¼ (½) cup ice-cold water
- 10 (20) pounds ground pork, beef, or turkey
Steps
- In a small bowl, combine all of the seasonings and mix well.
- Add the seasonings to your ground meat and mix thoroughly.
- Brown or cook as desired or you can stuff into casings and freeze.
Notes
- The numbers in parentheses ( ) are the amounts for 20 pounds of meat.
- I always take a handful of sausage and fry it up for a taste test. You can add more seasoning if you would like.
- If you want sweet sausage omit the red pepper and cut the paprika in half. (it's for the red color)
- When you fry up a test patty, you can add about a ¼ cup of vegetable oil if it's dry.
- I always make a big batch of mix to use whenever I need it.
