Kristie's Perfectly Puffy Pancakes
Ingredients
  • 1 cup heavy whipping cream
  • 2 TBSP white vinegar
  • 1 cup almond flour
  • ⅓ cup vanilla egg white protein powder (whey protein powder will also work)
  • 2 Tbsp. coconut flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon, if desired, and sweetener (liquid or powder or combination)
  • 2 pastured eggs
  • 3 T melted butter
  • 2 tsp vanilla extract
  • 2 TBSP coconut milk or water
