Tuscan Stuffed Zucchini
Ingredients
  • ¾ cup quinoa
  • 2 zucchini, halved lengthwise
  • 2 vegan sausages, removed from the casing and crumbled
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • ½ tsp red chile flakes
  • 4 oz grape tomatoes, halved
  • ¼ cup panko breadcrumbs
  • 1 lemon, one half juiced, one half cut into wedges
  • 2 tbsp 2 tsp olive oil*
