Shortbread Crumb Topping
Ingredients
  • 3 tbsp butter, melted
  • 1 cup almond flour
  • ¼ cup sweetener
  • ½ tsp vanilla
  • ½ tsp strawberry extract
Steps
  1. Preheat the oven to 325 degrees
  2. In a medium bowl, mix everything except flavors
  3. Stir with a fork until well mixed and crumbs form.
  4. Divide mix into 2 bowls
  5. Add the strawberry extract (and red food coloring if using) to one of the bowls and vanilla to the other... mix well.
  6. Line a small cookie sheet with parchment paper.
  7. Press one flavor mix into one side of the pan, and the vanilla mix into the other.
  8. Bake the shortbread for 10 to 12 minutes or until just golden.
  9. Remove from the oven and cool completely
  10. Break up into large crumbs and combine
  11. Store in an airtight container or bag in the refrigerator for up to one week, or in the freezer for up to three months.
