Ingredients
  • ½ packet of brown rice noodles (cook whole packet)
  • 200g tofu (could use kidney beans, chickpeas or edamame), cut into super thin slices

  • ½ zucchini, diced
  • ⅛ broccoli, broken into florets

  • 1 cup water
  • ½ tbsp soy sauce
  • 2 tbsp dark soy sauce
  • ½ tbsp vegetarian stir fry sauce
  • ½ tsp vegan "beef" stock powder
  • Few drops of sesame oil (optional)
  • Dash of white pepper
  • ½ spring onion stalk, finely sliced
  • 2 garlic cloves, sliced and roughly chopped
  • subheading: To Serve:
  • 1 red chilli, thinly sliced
  • 1 sprig fresh basil leaves
  • 2 sprigs fresh coriander leaves
  • 1 tbsp crushed peanuts
  • ½ lime
  • 1 tbsp toasted sesame seeds
