Thai Style Coconut Chicken & Broccoli
Ingredients
  • 1 T. coconut oil
  • 1 Red Pepper, sliced
  • 1 onion, halved and sliced
  • 3 c. broccoli florets
  • 3 chicken breasts, sliced into 1" x 2" pieces
  • 2 T. Red Curry paste
  • 2 T. Almond Butter
  • 1 T. Coconut Sugar (leave off for Whole 30)
  • 3 t. fish sauce
  • 1 can full fat coconut milk
  • 1 c. chicken broth
  • 1½ T. lime juice
  • ½ c. Basil leaves, torn into small pieces
  • sea salt to taste
  • toppings: shredded coconut, almonds, green onions
  • rice or cauilflower rice
